Vegetarian Bean & Vegetable Soup Recipe with Globally Inspired Flavors

A flavorful, high fiber and nutrient-dense vegetarian recipe made interesting with a celebration of globally inspired flavors.

Makes 4 servings.

Ingredients

  • Up to 2 cups diced vegetables of your choice (onions, carrots, celery, potatoes, diced tomatoes, bell peppers, zucchini)
  • 1 bottle Mesa de Vida Globally Inspired Cooking Sauce - Creole, Latin, Mediterranean or Moroccan flavor
  • 4 cups broth
  • 1-2 cans rinsed and drained beans or lentils (pinto, cannellini, black, kidney, garbanzo/chickpea, etc.)
  • Salt to taste/health needs

Directions

  1. In a soup pot over medium-high heat, saute vegetables until translucent, about 8 minutes
  2. Add remaining ingredients, bring to a simmer
  3. Cover and lower the heat to low. Cook for 20-30 minutes until the vegetables are tender and the flavors have combined
