Tagine-Inspired Chicken & Vegetables Recipe

Tagine is the name of a Moroccan cooking vessel, as well as a Moroccan stew. This easy recipe features tender chicken and vegetables braised and infused with amazing flavor from Mesa de Vida's Moroccan inspired cooking sauce.

Serves 4-6.

Ingredients

  • 4-6 chicken breasts, thighs, or legs; or boneless skinless chicken breasts or thighs
  • 1 bottle Mesa de Vida Moroccan Inspired Cooking Sauce
  • 2 cups vegetables of your choice (we love a combination of green olives, preserved lemon, bell peppers, sliced onion and diced dried apricot)
  • Salt to taste/health needs
  • optional: fresh sliced lemon, fresh parsley and chopped almonds

Directions

  1. Preheat oven to 375 degrees
  2. Season chicken with salt and pepper to taste
  3. In an oven-proof Dutch Oven, or heavy skillet with high sides and a lid, heat pan to medium-high heat and sear chicken until golden brown on all sides
  4. Add remaining ingredients (except almonds and parsley, if using), stir to combine
  5. Cover with the lid and place into the oven. Bake for 35-40 minutes until the chicken is fully cooked
  6. Serve garnished with fresh parsley and chopped almonds if you like, and enjoy!
  7. Couscous is the classic side dish to serve tagine with, but you can also serve as a stew, or over mashed potatoes, rice, quinoa, or pasta.
