Saucy Simmered Eggs (Shakshuka Style)

This easy recipe uses our globally inspired starter sauces to make an incredibly quick, flavor-packed, absolutely delicious version that you’ll want to make for brunch, quick dinners, or anytime!

Ingredients

  • 2 tb olive oil
  • 1/2 bottle (about 1 cup) Mesa de Vida Cooking Sauce - Mediterranean, Latin, Creole or Moroccan inspired flavors
  • 13 oz crushed tomatoes
  • 6-12 eggs
  • salt and pepper to taste
  • optional: crumbled feta or cotija cheese; bread and a fresh garlic clove for serving

Directions

  1. Add the olive oil and Mesa de Vida cooking sauce to a cold skillet. Turn the heat up to medium high and cook until fragrant and simmering. (This prevents the oil and sauce from spattering.)
  2. Stir in the crushed tomatoes and salt to taste. Simmer for 2 minutes.
  3. Crack the eggs into a bowl, then pour into the simmering sauce. Gently use a spoon to stir through the egg white to allow the sauce to come up between each egg.
  4. Season the eggs with salt and pepper.
  5. Cover lower the heat to medium low. Cook to your desired doneness
  6. 6. Sprinkle with cheese if desired and serve immediately with bread (sourdough, pita, lavash, tortillas, etc.) rubbed with a fresh garlic clove, or over polenta.
