Ingredients
-
2 tb olive oil
-
1/2 bottle (about 1 cup) Mesa de Vida Cooking Sauce - Mediterranean, Latin, Creole or Moroccan inspired flavors
-
13 oz crushed tomatoes
-
6-12 eggs
-
salt and pepper to taste
-
optional: crumbled feta or cotija cheese; bread and a fresh garlic clove for serving
Directions
-
Add the olive oil and Mesa de Vida cooking sauce to a cold skillet. Turn the heat up to medium high and cook until fragrant and simmering. (This prevents the oil and sauce from spattering.)
-
Stir in the crushed tomatoes and salt to taste. Simmer for 2 minutes.
-
Crack the eggs into a bowl, then pour into the simmering sauce. Gently use a spoon to stir through the egg white to allow the sauce to come up between each egg.
-
Season the eggs with salt and pepper.
-
Cover lower the heat to medium low. Cook to your desired doneness
-
6. Sprinkle with cheese if desired and serve immediately with bread (sourdough, pita, lavash, tortillas, etc.) rubbed with a fresh garlic clove, or over polenta.
