Mediterranean Slow Cooker Shredded Meat Ragu

Rich, bold and flavorful Mediterranean flavors are infused in this healthy slow cooked beef, pork, lamb or chicken ragu recipe. Serve with hot cooked pasta or over mashed potatoes for a great Sunday dinner or casual dinner party recipe. 

Makes 4 servings.

This recipe can be made oil free, dairy free, and gluten free, making it a great option for those with dietary restrictions.

Ingredients

  • 2 lb bone-in protein cut (bone-in short ribs, chuck roast, lamb roast, or chicken pieces), or 1-½ lb boneless protein cuts
  • 1 bottle Mesa de Vida Mediterranean Inspired Cooking Sauce
  • 14 oz canned crushed tomatoes
  • Salt to taste/health needs
  • ½ cup broth

Directions

  1. Sear protein if desired. Add ingredients to the slow cooker, stir to combine
  2. Cover and cook on low for 6-8 hours
  3. Oven-Braised instructions: After searing the meat add the ingredients to an oven proof dish with a tight fitting cover. Cook in a 375 degree preheated oven for 60-90 minutes, or until the meat is fall-apart tender. 
  4. Shred the meat, remove the bones (if applicable), toss with the sauce, and serve as you like
