Mediterranean Meatball Minestrone Stew Recipe

This is a nutrient powerhouse slow cooker stew made with simple ingredients that tastes incredible!

Ingredients

  • 1 bottle Mesa de Vida Mediterranean Inspired Cooking Sauce
  • 12-16 oz prepared meatballs, cut in half if desired (fresh or frozen, regular pork or chicken, or plant-based versions) *we used Aidell's chicken Italian meatballs for this recipe
  • 1 cup chopped bell pepper
  • 1 can (13 oz) canned diced or crushed tomatoes
  • 1 can (13 oz) canned chickpeas/garbanzo beans, rinsed and drained
  • 2 cups broth of your choice
  • salt to taste
  • 2 cups packed fresh spinach
  • 1 cup canned chopped, or thawed frozen, green beans (you can also use fresh green beans, if you do add them at the beginning of the recipe)
  • 1/4 cup pearl couscous, or ditalini or orzo pasta
  • fresh grated parmesan cheese (optional)

Directions

  1. Add the Mesa de Vida cooking sauce, meatballs, bell pepper, tomatoes, beans, broth and salt to the slow cooker. Stir and cover. Cook on low for 4-6 hours.
  2. Stir in the spinach, green beans and couscous; cover and cook for 20 more minutes.
  3. Serve with parmesan cheese if desired, and enjoy!
