Jambalaya Inspired Skillet

This Creole chicken skillet is inspired by jambalaya. It's a delicious and healthy one-pan recipe infused with the flavors of our Creole inspired cooking sauce.

Makes 4 servings.

Ingredients

  • Approximately 1 lb protein of your choice (4-6 small chicken thighs and/or breasts, sliced smoked sausage, shrimp)
  • Up to 2 cups diced vegetables of your choice (bell pepper, onion, frozen chopped okra)
  • 1 cup white rice, rinsed and drained
  • 1 bottle Mesa de Vida Creole Inspired Cooking Sauce
  • 3/4 cup broth
  • Salt to taste

Directions

  1. In a large skillet over medium-high heat, sear protein (if using diced or whole chicken pieces), or fully cook (for ground meat) until golden brown
  2. Stir in your vegetables, cook for 3 minutes
  3. Stir in the remaining ingredients. Bring to a simmer, then lower the heat to low
  4. Cover with lid, or foil, and cook for 20-25 minutes until the meat is fully cooked and the rice is tender
  5. Turn off the heat and let rest for 5 minutes. Fluff the rice with a fork and serve

Tips:

If your stove heat is a little higher, you may notice that your rice is drying out sooner - just add 1/4 cup more broth if needed. Alternately, some vegetables put off a lot of liquid, so if you find your rice has a bit of liquid that hasn't absorbed after the final cooking time, turn the heat back on to low and cook a few more minutes.
