Healthy Un-Stuffed Cabbage Roll Skillet Recipe with Globally Inspired Flavor

If you love cabbage rolls, you'll love this quick skillet version perfect for a weeknight dinner!

Makes 4-6 servings. Total time about 45 minutes

Cabbage rolls are typically made with ground meat, rice and seasonings, stuffed into steamed cabbage leaves and rolled up, then cooked in a savory tomato sauce. The process is a labor love, for sure.

In this easy version, we're taking ground protein (beef, pork, or a plant-based version - you can even make it with cooked beans) and diced cabbage, and simmering it up in any flavor of Mesa de Vida's globally inspired cooking sauces.

Ingredients

  • 2 tsp healthy oil/fat of your choice (optional)
  • 1 lb ground beef, pork, plant-based ground meat alternative, or 2 cups of beans
  • 2 cups cabbage, cut into 1" dice
  • 1 bottle Mesa de Vida's globally inspired cooking sauce - any flavor
  • 1/4 cup water
  • 28 oz canned crushed tomatoes
  • salt to taste
  • Hot cooked rice or pasta to serve, we like to add a dab of butter or ghee to ours for more flavor. You can also substitute mashed potatoes or cauliflower mash.

Directions

  1. Heat a large skillet over medium high heat. When hot, add the oil/fat (if using) and swirl to coat. Add the protein to the pan, crumbling and stirring often, until about 80% browned.
  2. Add the cabbage, cover and cook about 5 minutes until lightly wilted.
  3. Add the Mesa de Vida cooking sauce, 1/4 cup water (shake it out in the bottle to get all of the goodness out), canned tomatoes and salt to taste.
  4. Bring to a simmer, the lower the heat to low and cover. Simmer for 25-30 minutes until the cabbage is soft and tender.
  5. Serve spooned over hot cooked rice or pasta, mashed potatoes or cauliflower mash.
  6. Enjoy!
