Ingredients
- 1 to 1-1/2 lb beef stew meat, or boneless beef chuck roast cut into 1" cubes

2 cups vegetables, chopped (we love to use carrots and bell peppers, but feel free to use whichever vegetables you have on hand such as onions, zucchini, eggplant, okra, celery, etc.)

1 bottle Mesa de Vida Globally Inspired Cooking Sauce - Caribbean, Creole, Latin, Mediterranean or Moroccan inspired flavors

1/2 cup lentils, rinsed and drained

2 cups broth

Salt to taste

Optional: fresh parsley or other herbs for garnish
Directions

Optional step: sear the beef in a small amount of hot oil/fat on each side until golden brown.

Combine the ingredients to a Dutch oven, soup pot, or high-sided skillet with a lid. (Or, add to your slow cooker and set to cook on low for 6-8 hours.)

Bring to a simmer over medium-high heat, lower the heat to low and cook for 45 minutes to 1 hour, cooking until the beef is fall-apart tender.

Taste to check for seasoning, add salt if necessary.
