Sweet Potato Protein & Fiber Bowl

Sweet Potato Protein Bowls are a popular recipe right now,
and for good reason!

They're easy, quick, perfect for advance meal-prep, and a great source of nutrition.

But, they can get boring and lack excitement, and, for some people, adding honey and cottage cheese to a bowl of sweet potatoes and ground beef doesn't create a palatable flavor experience. 

We upped the nutrition and fiber by adding in an extra vegetable along with the ground beef, and, of course, our healthy cooking sauces not only boost the nutrition, but also the flavor and inspiration!

This allows you to make this nourishing meal not only quicker and more flavorful, but you can switch to any of our globally inspired cooking sauces to bring a new culinary adventure each time you make it!   

Our oil-free, healthy cooking sauces are so full of flavor, you can skip adding honey to the top. We also opted to serve the cottage cheese on the side, instead of mixed in with the bowl. 

Ingredients

  • 1 to 1-½ lb ground beef (we used 93% lean ground beef; you can swap in any ground protein, including vegetarian ground beef alternative)

  • 2 cups diced zucchini, bell peppers, onions, cabbage, eggplant, carrots or cabbage

  • 1 bottle Mesa de Vida Globally Inspired Cooking Sauce of your choice (Caribbean, Creole, Latin, Mediterranean or Moroccan)

  • Salt to taste

  • 4-6 cups roasted sweet potatoes (cooked from fresh or frozen; or swap in mashed sweet potato, or cooked sweet potato fries)

  • Avocado slices

Directions

  1. Heat a skillet over medium-high heat. (Optional: add oil to the pan if needed/preferred.) When hot add the ground beef. Cook, crumbling and stirring often, until golden brown and almost fully cooked.

  2. Add the vegetable(s) to the pan. Cook, stirring often, until any liquid has evaporated from the pan and the vegetable(s) are tender.

  3. Add the Mesa de Vida cooking sauce to the pan, along with salt to taste/health preferences. Stir often, cooking about 3-5 minutes until most of the liquid has evaporated and the mixture is slightly thickened.

  4. Meanwhile, cook sweet potatoes how you prefer, and keep warm.

  5. Serve the protein mixture alongside the sweet potatoes, then add sliced avocado. Serve with cottage cheese, if you desire.
