Easy Stuffed Peppers Recipe with a Globally Inspired Flavor Twist

Stuffed peppers can be time and effort intensive. Our easy, no-fuss recipe not only takes about 5 minutes to prep then bakes practically effortlessly in the oven while you relax, our delicious, healthy cooking sauces bring a celebration of globally inspired flavor to this classic meal, no extra ingredients or work required!  

Makes 4 servings.

Ingredients

  • 4-6 bell peppers, cut the very top off and remove the seeds; dice the top (discarding the stem) and add to a bowl for the filling (Alternative: Cut the peppers in half vertically and remove the seeds)
  • 1 lb ground meat (ground turkey, chicken, pork, beef, or plant-based crumble)
  • 1 bottle Mesa de Vida Latin Inspired Cooking Sauce 
  • 1 cup cooked rice (leftover cooked rice, quinoa, or orzo pasta also works great)
  • 15 oz can tomato sauce (regular or low/no sodium)
  • Salt to taste/health needs
  • Optional: Shredded or crumbled cheese (feta cheese works great with our Mediterranean and Moroccan inspired flavors, cheddar or Monterey jack works great with our Latin flavor)

Directions

  • Preheat your oven to 400 degrees. 
  • Place the bell peppers in an oven-proof casserole or baking dish. 
  • In a bowl, combine any reserved diced bell pepper from trimming the bell peppers, the ground meat/plant-based alternative, rice, half the bottle of Mesa de Vida's cooking sauce, salt to taste/health needs, and cheese (if using). Mix to combine evenly. Stuff the mixture evenly between the prepared bell peppers. 
  • In the same bowl the meat was in, combine the tomato sauce, the remaining half of the Mesa de Vida cooking sauce, and salt to taste/health needs. Stir to combine then pour evenly over and around the stuffed bell peppers. 
  • Cover with foil or a lid and bake for 30 minutes. 
  • After 30 minutes remove the foil or lid and bake another 30 minutes. 
  • Serve with the extra sauce and enjoy!
