Mesa de Vida Shrimp and Grits Recipe

Easy Shrimp and Grits Recipe

This shrimp and grits recipe is easy to make, but delivers big on that classic Creole flavor! Our Creole inspired cooking sauce cuts down on most of the prep work, so you can enjoy this incredible meal on a busy weeknight, or serve it up to impress your guests at your next dinner party.

Makes 4 servings.

Ingredients

  • 2 tsp healthy oil/fat of your choice (butter or ghee is our favorite for this recipe)
  • 1 link (about 3 oz) Andouille sausage (regular or chicken sausage; or substitute 1 link of smoked kielbasa or Polish sausage) thinly sliced
  • 12-16 oz shrimp, peeled and deveined
  • Optional: 1 Tb flour
  • Optional: extra chopped fresh garlic
  • 1 bottle Mesa de Vida Creole Inspired Cooking Sauce
  • Salt to taste/health needs
  • 1/4 cup chicken broth (use 1/2 cup if you add flour to the sauce)
  • 4 portions of prepared grits, regular or cheesy, cooked according to package or recipe directions
  • Optional: Chopped green onion and/or parsley to garnish

Directions

  1. In an oven-proof skillet on medium-high heat, add oil/fat of your choice, swirl to coat. Add the sausage, quickly sear, stirring often, until golden brown on the edges. Remove with a slotted spoon to a plate.
  2. Add the shrimp to the pan in an even layer. Cook on both sides until just golden brown, but not cooked all the way through. Remove with a slotted spoon to the plate with the cooked sausage.
  3. Take the pan off the heat for about 30 seconds to slightly cool, then add the Mesa de Vida Creole Inspired Cooking Sauce to the pan, stirring often so it doesn't bubble up and spatter. (Add the garlic at this point if you'd like the dish extra garlicky.) Place the skillet back on the heat and stir often, cooking for 2 minutes until the sauce thickens slightly and the flavors intensify.
  4. Optional: Stir in the flour if you prefer a thicker sauce.
  5. Stir in the broth and add the salt and pepper. Bring to a simmer.
  6. Add the shrimp and sausage back into the sauce. Stir and simmer for another 1-2 minutes, just until the shrimp are opaque and cooked through.
  7. Serve the shrimp and sausage over the grits, spooning extra sauce over each serving, garnish with green onions or parsley if you like.
  8. Enjoy!
