Easy Oven-Braised Chicken with Globally Inspired Flavors

This delicious recipe transforms any meat and vegetables you have on hand into a succulent, nutritious and delicious meal with globally inspired flavor. Try a new flavor or Mesa de Vida sauce, vegetables protein for a new culinary adventure each week! 

Serves 4-6.

Ingredients

  • Optional: flour (regular or rice flour) for dredging
  • 4-6 pieces boneless, skinless chicken breasts or thighs, thickly sliced pork tenderloin, or pork chops, or beef stew meat, or beef chuck roast cut into 2-3" peices.
  • 1 bottle Mesa de Vida Globally Inspired Starter Sauce, any flavor
  • 2 cups vegetables of your choice (sliced mushrooms, diced tomatoes, spinach, bell peppers, zucchini, eggplant, butternut squash, onions, etc.)
  • Salt to taste/health needs
  • 1/2 cup broth and/or 1/2 cup white wine

Directions

  1. Preheat oven to 375 degrees
  2. Season chicken with salt and pepper to taste. Optional: dredge the meat in flour and shake off the excess.
  3. In an oven-proof skillet on medium-high heat, sear meat until golden brown on both sides
  4. Optional step if using wine: add wine to the pan, cook 30 seconds
  5. Add remaining ingredients to pan, stir to combine
  6. Cover, transfer skillet to the oven and cook for 20-50 minutes, until meat is cooked through and tender. (Smaller, boneless cuts of meat will cook quicker, and beef may take longer.)
