Ingredients

Optional: flour (regular or rice flour) for dredging

4-6 pieces boneless, skinless chicken breasts or thighs, thickly sliced pork tenderloin, or pork chops, or beef stew meat, or beef chuck roast cut into 2-3" peices.

1 bottle Mesa de Vida Globally Inspired Starter Sauce, any flavor

2 cups vegetables of your choice (sliced mushrooms, diced tomatoes, spinach, bell peppers, zucchini, eggplant, butternut squash, onions, etc.)

Salt to taste/health needs

1/2 cup broth and/or 1/2 cup white wine

Preheat oven to 375 degrees

Season chicken with salt and pepper to taste. Optional: dredge the meat in flour and shake off the excess.

In an oven-proof skillet on medium-high heat, sear meat until golden brown on both sides

Optional step if using wine: add wine to the pan, cook 30 seconds

Add remaining ingredients to pan, stir to combine

Cover, transfer skillet to the oven and cook for 20-50 minutes, until meat is cooked through and tender. (Smaller, boneless cuts of meat will cook quicker, and beef may take longer.)
