Easy, Healthy, Gumbo Inspired Stew Recipe

If you're looking for a healthier, easy recipe for gumbo to make on any weeknight, try our version. Just a few simple ingredients, clean and savory Creole flavors from Mesa de Vida's oil-free cooking sauce and you've got a great meal in no time.  

Makes 4 servings.

Ingredients

  • 2 tsp flour (regular or gluten free brown rice flour)
  • 2 Tb oil of your choice
  • 1 lb your choice of combination of protein (diced boneless skinless chicken breasts or thighs, sliced smoked sausage, peeled and deveined shrimp, cooked crab meat)
  • 1 bottle Mesa de Vida Creole Inspired Cooking Sauce
  • 2 cups diced vegetables of your choice (we suggest green bell pepper, green onion and chopped okra - frozen works great)
  • 1 cup chicken broth
  • Salt and hot sauce to taste

Directions

  1. In a soup pot over medium heat, whisk together the flour and oil. Cook until the color of the roux turns dark copper brown, similar to the color of a penny
  2. Immediately add the remaining ingredients and stir to combine
  3. Bring to a simmer, then lower the heat to low
  4. Cook, stirring occasionally, for 25-30 minutes until the meat is cooked through and the vegetables are tender
  5. Serve with hot cooked white rice
