Chicken Picado Recipe

Chicken Picado is a quick and easy, healthy chicken recipe that is perfect for serving with rice, beans, tortillas, or cauliflower rice. It's a savory chicken, bell peppers and onion dish with a flavorful tomato-based sauce.

Ingredients

  • 1 to 1-1/2 lb boneless, skinless chicken breast or thigh, cut into 2" pieces
  • 1 bell pepper, sliced (any color)
  • 1 onion, sliced
  • 1 bottle Mesa de Vida Latin Inspired Cooking Sauce
  • 1/4 cup broth
  • Salt and hot sauce to taste

Directions

  1. Heat a large skillet over medium-high heat, when hot add chicken, bell peppers and onion. Cook until chicken is golden brown on both sides
  2. Pour in Mesa de Vida Latin Inspired Cooking Sauce, broth salt and hot sauce to taste. Bring to a simmer then lower the heat to low.
  3. Cover and cook for 25-30 minutes, stirring occasionally, until chicken is tender and cooked through.
Serve with hot cooked rice, beans, tortillas, or over cauliflower rice.
