Chicken & Chickpea Cassoulet Recipe

There is just something about succulent, tender, flavorful-to-the-middle braised meat, vegetables, and beans. This cassoulet-inspired recipe is one of our faves and makes for an impressive meal for guests, as well as an easy meal any night of the week.

Serves 4-6.

Ingredients

  • 4-6 pieces bone-in or boneless chicken breasts, thighs, or legs
  • 1 bottle Mesa de Vida Globally Inspired Cooking Sauce, any flavor
  • 1 can rinsed and drained garbanzo beans/chickpeas
  • 1 cup vegetables of your choice (diced onions, tomatoes, bell pepper, zucchini, eggplant)
  • 1 cup broth
  • Salt to taste/health needs

Directions

  1. Preheat oven to 375 degrees
  2. Season chicken with salt and pepper to taste
  3. In a preheated Dutch Oven or large skillet with high sides over medium-high heat, sear chicken until golden brown on all sides
  4. Add remaining ingredients, stir gently to combine. Nestle the chicken on top of the vegetable and bean mixture
  5. Transfer the pot or skillet to the oven and bake for 35-45 minutes, until the chicken is fully cooked and tender. (You can also add everything to the slow cooker and cook on low for 6-8 hours.)
  6. Serve as a stew, or over mashed potatoes, rice, polenta, couscous, quinoa, or pasta.
