1 lb boneless, skinless chicken breasts or thighs

1 large diced bell pepper

1 bottle Mesa de Vida Caribbean Inspired Cooking Sauce

1/2 can (6 oz) canned coconut milk

Salt to taste
Directions

In a large skillet over medium-high heat, sear chicken until golden brown on both sides

Add bell pepper, cook for 3 minutes

Add remaining ingredients. Bring to a simmer, then lower the heat to low

Cook for 25-30 minutes until chicken is cooked through and tender
- Serve with hot cooked rice or over warm chickpeas/garbanzo beans, and with warm flatbread
