Caribbean Inspired Coconut Chicken Skillet Recipe

This savory, curry-inspired Caribbean Coconut Chicken Skillet is an easy-to-make saucy, flavorful chicken dish that's perfect for serving over hot cooked rice, or scooped up with flatbread. 

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 large diced bell pepper
  • 1 bottle Mesa de Vida Caribbean Inspired Cooking Sauce
  • 1/2 can (6 oz) canned coconut milk
  • Salt to taste

Directions

  1. In a large skillet over medium-high heat, sear chicken until golden brown on both sides
  2. Add bell pepper, cook for 3 minutes
  3. Add remaining ingredients. Bring to a simmer, then lower the heat to low
  4. Cook for 25-30 minutes until chicken is cooked through and tender
  5. Serve with hot cooked rice or over warm chickpeas/garbanzo beans, and with warm flatbread
