Ingredients
- 1 lb boneless, skinless chicken, diced; or 2 cans rinsed and drained pinto, black, or cannellini beans for a vegetarian version

2 cups diced or cubed vegetables of your choice (onion, tomato, bell pepper, frozen corn, zucchini, jalapeno)

1 bottle Mesa de Vida Latin Inspired Cooking Sauce

4 cups chicken or vegetable broth

Salt to taste/health needs
- Toppings for serving: fresh avocado, cilantro, and crispy tortilla strips
Directions

Add ingredients to the slow cooker, stir to combine.

Cover and cook on low for 4-6 hours
- Stove top directions: Add ingredients (except vegetables) to a soup pot, simmer over medium heat for 45 minutes or until the chicken is tender. Add the vegetables during the last 15 minutes.
- Add your toppings of choice and enjoy!
