Cantina Style Chicken and Vegetable Tortilla Soup Recipe

This easy and healthy cantina-style chicken and vegetable soup is brought to life with Mesa de Vida's Latin inspired cooking sauce. Simply pour the ingredients into the slow cooker and come home to an incredible meal!

Makes 4 servings.

This recipe can be made entirely oil free by skipping the tortilla strips.

Ingredients

  • 1 lb boneless, skinless chicken, diced; or 2 cans rinsed and drained pinto, black, or cannellini beans for a vegetarian version
  • 2 cups diced or cubed vegetables of your choice (onion, tomato, bell pepper, frozen corn, zucchini, jalapeno)
  • 1 bottle Mesa de Vida Latin Inspired Cooking Sauce
  • 4 cups chicken or vegetable broth
  • Salt to taste/health needs
  • Toppings for serving: fresh avocado, cilantro, and crispy tortilla strips

Directions

  1. Add ingredients to the slow cooker, stir to combine. 
  2. Cover and cook on low for 4-6 hours
  3. Stove top directions: Add ingredients (except vegetables) to a soup pot, simmer over medium heat for 45 minutes or until the chicken is tender. Add the vegetables during the last 15 minutes. 
  4. Add your toppings of choice and enjoy!
