Brothy Creole Beans and Greens Recipe

High in fiber and nutrients, our brothy, soupy beans infused with Creole inspired flavor is a simple yet spectacular pantry recipe.

Makes 4 servings.

Ingredients

  • Optional: 6-8 slices bacon, diced
  • 2 cans rinsed and drained red beans or kidney beans
  • 1 bottle Mesa de Vida Creole Inspired Cooking Sauce
  • 2 cups chopped kale
  • 6 green onions, chopped (save tender green top cuts for garnish)
  • 2 cups broth
  • Salt to taste/health needs
  • Optional: hot sauce for serving

Directions

  1. In a soup pot or large skillet over medium heat, cook bacon (if using) until golden brown and crispy
  2. Add remaining ingredients, stir to combine. Bring to a simmer, then lower the heat to low
  3. Cook for 20-30 minutes until the beans soak up the broth and thicken to your liking. (You can also put all of the ingredients in the slow cooker and let it cook low and slow for 4-6 hours.) 
  4. Serve with crusty bread, or cornbread and serve
