Black Bean Huevos Rancheros Recipe

This black bean huevos rancheros recipe is a hearty, high-fiber, high protein savory meal perfect for breakfast, brunch, lunch or even a vegetarian-friendly dinner. Simple ingredients transformed into a culinary adventure with Mesa de Vida! 

Makes 4-6 servings.

Ingredients

  • 2 cans rinsed and drained black beans
  • 1 bottle Mesa de Vida Latin Inspired Cooking Sauce
  • Salt and hot sauce to taste
  • 4-8 eggs
  • Optional: Crumbled cotija or jack cheese, fresh cilantro, and fresh chopped red onion for topping

Directions

  1. Combine beans, Mesa de Vida Latin Inspired Cooking Sauce, salt and hot sauce (if using) in a large skillet. Set over medium-high heat and bring to a simmer. Lower the heat to low and cook for 5 minutes
  2. Crack each egg into a bowl then carefully slide into the simmering bean and sauce mixture. Season eggs to taste with salt
  3. Cover and cook for 4-6 minutes, until eggs are cooked to your liking
  4. Garnish with crumbled cheese, cilantro and chopped onions and serve with warm tortillas
