Ingredients

1 lb diced boneless, skinless chicken breasts or thighs

Up to 2 cups diced vegetables of your choice (bell pepper, onion, sliced green olives, frozen peas, sliced mushrooms)

1 cup white rice, rinsed and drained

1 bottle Mesa de Vida Latin Inspired Cooking Sauce

3/4 cup broth

Salt to taste
Directions

In a large skillet over medium-high heat, sear chicken until golden brown

Stir in your vegetables, cook for 3 minutes

Stir in the remaining ingredients. Bring to a simmer, then lower the heat to low

Cover with lid, or foil, and cook for 20-25 minutes until the meat is fully cooked and the rice is tender

Turn off the heat and let rest for 5 minutes. Fluff the rice with a fork and serve
Tips:
If your stove heat is a little higher, you may notice that your rice is drying out sooner - just add 1/4 cup more broth if needed. Alternately, some vegetables put off a lot of liquid, so if you find your rice has a bit of liquid that hasn't absorbed after the final cooking time, turn the heat back on to low and cook a few more minutes.
