easy, healthy arroz con pollo recipe using Mesa de Vida Latin inspired cooking sauce

Arroz con Pollo Skillet

Arroz con pollo is a chicken and rice skillet that is popular in many Latin cuisines. The one-pan recipe is healthy and nutritious, as well as delicious with the tender, flavorful chicken and rice. Our Latin inspired cooking sauce brings a ton of flavor and nutrition to this recipe.

Makes 4 servings.

Ingredients

  • 1 lb diced boneless, skinless chicken breasts or thighs
  • Up to 2 cups diced vegetables of your choice (bell pepper, onion, sliced green olives, frozen peas, sliced mushrooms)
  • 1 cup white rice, rinsed and drained
  • 1 bottle Mesa de Vida Latin Inspired Cooking Sauce
  • 3/4 cup broth
  • Salt to taste

Directions

  1. In a large skillet over medium-high heat, sear chicken until golden brown
  2. Stir in your vegetables, cook for 3 minutes
  3. Stir in the remaining ingredients. Bring to a simmer, then lower the heat to low
  4. Cover with lid, or foil, and cook for 20-25 minutes until the meat is fully cooked and the rice is tender
  5. Turn off the heat and let rest for 5 minutes. Fluff the rice with a fork and serve

Tips:

If your stove heat is a little higher, you may notice that your rice is drying out sooner - just add 1/4 cup more broth if needed. Alternately, some vegetables put off a lot of liquid, so if you find your rice has a bit of liquid that hasn't absorbed after the final cooking time, turn the heat back on to low and cook a few more minutes.
