Moroccan Inspired Lentil & Sweet Potato Stew Recipe

A healthy, fiber-rich lentil and sweet potato stew recipe with bold and savory Moroccan flavors. This recipe is extremely easy to make and a great high protein vegetarian meal.

Makes 4 servings.

Ingredients

  • 1 onion, diced
  • 1 medium sweet potato, cut into 1" dice
  • 1 cup rinsed lentils
  • 1 bottle Mesa de Vida Moroccan Inspired Cooking Sauce
  • 4 cups broth
  • Salt to taste/health needs

Directions

  1. In a soup pot over medium-high heat, saute onion until translucent, about 5-8 minutes
  2. Add remaining ingredients, stir to combine. Bring to a simmer, then lower the heat to low
  3. Cook for 25-35 minutes, until lentils and sweet potatoes are tender
