Preheat your oven to 500 degrees.
Brush or wipe the oil on the inside of a large baking dish. *I prefer to use ceramic baking dishes since they soak and clean up wonderfully, but any baking dish will work.
Add the canned crushed/pureed tomatoes, Mesa de Vida Smoky Latin Recipe Starter and Cooking Sauce, salt/pepper/hot sauce/jalapenos to taste, stir to combine. Bake for 8 minutes, until bubbly in the center.
Use a measuring cup/back of a spoon to create an indent in the sauce, crack an egg into the nest of sauce. Repeat, dividing the eggs up evenly around the pan. Salt and pepper the eggs to taste. Bake for 5 minutes or so, or until the eggs are to your liking.
Serve the eggs and sauce on a warm tortilla, or with avocado wedges. Top with the toppings of your liking and serve warm. Enjoy!
