Stuffed meatloaf and rice taco skillet

Ingredients
  

  • 1 lb ground meat of your choice
  • 1 egg beaten
  • 1/2 cup bread crumbs (gluten-free if necessary)
  • 1 jar Mesa de Vida Smoky Latin Inspired Recipe Starter and Seasoning Sauce we'll be using 2 Tb + 1/2 cup for this recipe
  • 4 ounces cheese, cut into 4 even cubes cheddar, sharp cheddar, Monterey jack, pepper jack, and co-jack cheese are all great for this.
  • 1 cup white rice
  • 2 cups low-sodium broth of your choice
  • salt and hot sauce, to taste
  • Toppings of your choice: chopped tomatoes, onions, shredded lettuce, salsa, fresh cilantro, jalapenos, more cheese - whatever you like!

Instructions
 

  • Combine the ground meat, 2 Tb Mesa de Vida Smoky Latin Recipe Starter & Seasoning Sauce, beaten egg, breadcrumbs, and salt to taste in a mixing bowl. Fold the ingredients together until evenly combined (don't overmix as this will make tough meatloaves.)
  • Divide the meat mixture into 4 even portions. (I do this by laying the mixture onto a cutting board, forming into a circle, then cutting into 4 quadrants.) Form each portion into a patty, similar to a hamburger. Place one of the cheese cubes into the center of each patty, then form the meat up and around the cheese, sealed into a uniform patty.
  • Heat a large skillet over medium heat. (If your meat is exceptionally lean feel free to add a bit of healthy oil/fat to the pan and swirl to coat.) When hot, add the meat patties to the skillet and brown on both sides. When golden brown on both sides (they won't be fully cooked), remove to a plate.
  • Add the remaining 1/2 cup Mesa de Vida Smoky Latin Recipe Starter Sauce, broth, rice, and salt to taste to the skillet, stir to combine. Raise the heat to high, bring to a boil. As soon as the rice begins to boil, nestle each meatloaf back into the rice mixture and turn the heat down to low.
  • Cover and cook for 20 minutes, or until all of the moisture has been absorbed, and the rice is tender. Remove from the heat and let the skillet rest for 5 minutes.
  • Serve the rice and meatloaf with the toppings of your choice and enjoy!
