Black Bean Huevos Rancheros

Servings 4 -6 servings


  • 2 cans cooked black beans (about 6 cups) rinsed and drained well
  • 1 jar Mesa de Vida Smoky Latin Cooking & Seasoning Sauce
  • 2 Tb water
  • Salt and hot sauce to taste
  • 4-6 eggs

Serve with:

  • crumbled cotija cheese, chopped cilantro, diced avocado, pickled onion; serve with warm tortillas if you wish


  • In a skillet, bring the black beans, Mesa de Vida Smoky Latin Cooking & Seasoning Sauce, water, and salt and hot sauce (if using) to a simmer. Lower the heat to medium-low, cover and simmer for 8 minutes.
  • Using a spoon, create a well in the black beans for each egg. Crack in the eggs, season with salt and pepper.
  • Cover and cook until the eggs are done to your liking.
  • Serve with the toppings of your choice and enjoy!
