Caribbean Chicken Recipe

Servings 4 servings


  • 2-4 lb chicken on the bone, cut up; or use 1 1/2 lb boneless, skinless chicken breasts or thighs
  • 1/2 jar Mesa de Vida Caribbean inspired healthy cooking sauce
  • Salt, hot sauce and/or habanero to taste


  • Heat a large skillet or dutch oven over medium high heat.
  • Add 2 tsp healthy oil/fat of your choice, swirl to coat.
  • Optional: Season meat (chicken pieces on-or-off the bone, pork or beef roasts or tenderloin, turkey breast, etc.) to taste with salt or hot sauce.
  • Sear the meat to golden brown on all sides.
  • Pour your Mesa de Vida Caribbean inspired healthy cooking sauce over the meat. After pouring the sauce into the pan add enough water or broth to the jar to cover the meat about a quarter of the way, place the lid on and give it a shake to get all of the goodness out of the jar!
  • Bring to a boil, lower the heat to low and cover. Simmer until meat is tender and fully cooked. Remove the meat from the pan and let rest for 5-10 minutes.
  • Raise the heat under the sauce and bring to a boil, cook until the sauce is reduced to the thickness you desire.
  • Toss the chicken back into the reduced sauce, serve and enjoy!
