Smoky Spanish Braised Chicken

Serve this tender, succulent chicken with it’s gloriously rich-tasting sauce over rice, pasta or grain of your choice. Add a simple roasted vegetable to complete a wonderful dinner to celebrate any night at your table of life. (Or, enjoy with our Patatas Bravas recipe!)

Spanish Braised Chicken

Serves 4-6

Chicken pieces of your choice., skin removed if you wish. *For my family of 4 I like to use 2 breasts, 4 drumsticks and 2 thighs, or I use a whole cut-up chicken. This gives us plenty for dinner and some for lunch, or leftover chicken for sandwiches or salads, the next day.

1/2 jar (about 1/2 cup) Mesa de Vida Smoky Latin Inspired Cooking Sauce

2 Tb Sherry vinegar (If you don’t have Sherry vinegar, Sherry wine works, as well)

1/2 cup water or broth

Salt to taste


Heat a large, heavy-bottomed skillet or Dutch oven over medium high heat. When hot add a bit of healthy oil/fat of your choice to coat. (About 1 Tb should do.)

Season the chicken with salt, add the chicken to the pot and brown on all sides.

Pour in the Mesa de Vida recipe starter and cooking sauce, Sherry vinegar, water or broth, and a pinch of salt to taste. Arrange the chicken pieces so they’re nestled into the sauce. 

Lower the heat to low, cover and simmer for approximately 45 minutes, (less time if you’re using boneless chicken pieces). Cook until the chicken reaches at least 170 degrees, but I like to cook this until the chicken starts to fall off the bone. 

Remove the chicken to a platter or serving dish. Raise the heat in the pot to medium-high, and cook, stirring constantly, until the sauce reduces and thickens to a cream-like consistency. 

Spoon the thickened sauce over the top of the chicken and serve.
