Moroccan Beef & Veggie Skillet

  • 1 jar Mesa de Vida North African Cooking & Seasoning Sauce
  • 1-1/2 to 2 lb ground beef or any ground meat, or ground meat alternative you like
  • 1 eggplant peeled (if desired), and diced. Substitute zucchini, green beans, or any other vegetable you'd like.
  • cauliflower rice for serving or serve with regular white rice, toss with pasta or zucchini noodles, or serve with roasted potatoes seasoned with a bit of the North African sauce before roasting
  • salt and hot sauce or harissa to taste Our cooking and seasoning sauces are extremely low in sodium so you can salt to your own tastes! Our North African sauce is very mild so it is approachable for all tastes, spice to your liking.
  • Optional: fresh cilantro for garnish


  • Heat a large skillet over medium-high heat. When hot add the beef, eggplant, and North African cooking sauce to the pan. Stir and break the beef into crumbles. Salt to taste.
  • Cook, stirring often, until the beef and eggplant is fully cooked.
  • Meanwhile, steam or saute the cauliflower rice to serve with the Moroccan beef. I like to add a bit of ghee, and/or roasted garlic olive oil to mine to give it great flavor.
  • Serve the beef and vegetable mixture on, or next to, your cauliflower rice. Enjoy!
