This easy, delicious and healthy oven-baked Huevos Rancheros recipe is quick and easy to make thanks to Mesa de Vida’s Smoky Latin-Inspired Recipe Starter and Cooking Sauce. Huevos Rancheros are a perfect easy brunch dish, or a light vegetarian meal, any time of day.

The flavors the Mesa de Vida concentrated flavor base bring to this dish make it taste like you spent hours developing the flavors. All you have to do is pop open the jar!

This recipe is gluten free (use gluten free or corn tortillas if needed), and Whole30/Paleo compatible if you skip the cheese and tortilla, and serve with avocado wedges.

Easy Oven-Baked Huevos Rancheros Recipe

Servings 4


  • 1 Tb healthy oil/fat of your choice
  • 2 cups canned crushed/pureed tomatoes
  • 1/2 jar Mesa de Vida Smoky Latin Recipe Starter & Cooking Sauce 1/2 cup
  • 4 -8 eggs
  • salt, pepper, hot sauce and/or sliced jalapenos to taste
  • Warm tortillas for serving. Topping such as crumbled cotija cheese, diced avocados, minced green or red onion


  • Preheat your oven to 500 degrees.
  • Brush or wipe the oil on the inside of a large baking dish. *I prefer to use ceramic baking dishes since they soak and clean up wonderfully, but any baking dish will work.
  • Add the canned crushed/pureed tomatoes, Mesa de Vida Smoky Latin Recipe Starter and Cooking Sauce, salt/pepper/hot sauce/jalapenos to taste, stir to combine. Bake for 8 minutes, until bubbly in the center.
  • Use a measuring cup/back of a spoon to create an indent in the sauce, crack an egg into the nest of sauce. Repeat, dividing the eggs up evenly around the pan. Salt and pepper the eggs to taste. Bake for 5 minutes or so, or until the eggs are to your liking.
  • Serve the eggs and sauce on a warm tortilla, or with avocado wedges. Top with the toppings of your liking and serve warm. Enjoy!
