Arroz con pollo was always one of my favorite meals to order at Mexican restaurants. A big heap of rice, chicken, onions and mushrooms cooked with a delicious, savory sauce.
This grain-free, lower carbohydrate, Whole30 and Paleo friendly healthy arroz con pollo recipe will definitely hit the spot when you’re craving this comforting meal. In addition, it is super fast, easy, and is a family-friendly meal that is ready in about 20 minutes! If you’re looking for ways to use cauliflower rice this is the perfect recipe for a fool-proof, delicious recipe everyone will enjoy.

If you’re a mixed family like mine (some grain/gluten free, participating in a Whole30 round, while others love, and do well with, rice) and don’t want to make separate meals for everyone, this healthy Mexican-inspired recipe is perfect. Simply cook a batch of rice while you’re making the cauliflower arroz con pollo, and serve it up along side. I enjoy the meal as-is, with a nice big green salad on the side, or some cucumbers with lime juice. Yum!

Cauliflower Arroz con Pollo
Serves 4 – easily double or triple, and freezes well
2 tsp healthy oil/fat of your choice (skip if you’re using a nonstick skillet and want to keep this low-fat/fat-free
1 lb diced boneless skinless chicken breast and/or thighs (about 1″ dice)
8 oz mushrooms, quartered
4 cups riced cauliflower rice (Frozen works great!)
1/2 cup liquid (broth, bone broth, or water)
Salt to taste (our cooking & seasoning sauces are low in sodium so you can salt to your own taste)
- Preheat a large skillet over medium heat, when hot add oil, swirl to coat.
- Add chicken, saute, stirring often, until golden brown.
- Add the mushrooms, Mesa de Vida Smoky Latin cooking & seasoning sauce, and cauliflower rice, stirring and cooking about 30 seconds after adding each ingredient.
- Add broth (or water), and salt to taste.
- Bring to a simmer, lower the heat to low and cover. Cook for about 10 minutes until the liquid has soaked up into the cauliflower rice and it is fluffy and tender.
- Serve and enjoy!
