Summertime cooking is often all about salads and grilling. This Burst Tomato Sauce Recipe is another great summer recipe, too! It’s quick to cook, won’t heat up the kitchen too much, and takes advantage of the fresh, juicy summer cherry tomatoes straight from the vine.

Our Mediterranean Recipe Starter and Seasoning Sauce brings a boost of gourmet flavor to this simple skillet tomato sauce. Our North African Recipe Starter and Seasoning Sauce would also be a delicious option if you’d like a little more Moroccan flavor for your burst tomato sauce.

This easy recipe is great as-is for a light, plant-based meal. Add a bit of feta cheese for a vegetarian main-entree, or serve this simple summer pasta alongside any grilled protein you like.

This fresh and juicy sauce is wonderful tossed with pasta – regular, gluten-free, or even chickpea pasta, but it is also delicious if you’d like to swap in a can of rinsed and drained chickpeas or white beans for a warm burst tomato and bean salad.

Burst Tomato Sauce

Servings 4


  • 2 tsp ghee, or avocado oil or any high quality oil of your choice that is safe for high temperatures
  • 1 pint cherry or grape tomatoes About 3 cups
  • 1 small zucchini diced, optional
  • 2 heaping Tb Mesa de Vida Mediterranean, or North African, Recipe Starter and Seasoning Sauce
  • salt to taste
  • 1 clove crushed garlic optional, and only if you love your food really garlicky like I do!
  • 2 handfuls baby spinach
  • 8 oz hot cooked pasta, or 1 can rinsed and drained beans (chickpeas and white beans would be great with this)
  • feta and/or parmesan cheese for serving, optional


  • Get your pasta on to cook according to manufacturer's instructions (omit this step if you're serving this ragu with beans.)
  • Heat a large skillet over medium heat. Add ghee/oil, swirl to coat.
  • Add the tomatoes and zucchini (if using), then turn the heat up to medium-high. Cook until the tomato skins start to char and shrink up a bit.
  • Stir in the Mesa de Vida Recipe Starter and Seasoning Sauce and garlic (if using). Salt to taste. Continue to cook, stirring constantly, until the tomatoes begin to burst.
  • Stir in the spinach (if using), and the hot cooked and drained pasta, or beans.
  • Adjust the salt to your taste, serve with cheese if you like, and enjoy!
