Braised Butternut Squash and Ground Turkey Skillet

This easy skillet braise features butternut squash and ground turkey that get braised together in our North African-flavor recipe starter sauce. A 30 minute recipe that is an everyday gourmet go-to! The recipe can be made with any ground meat of your choice, or keep it meat-free by using a plant-based meat alternative of your choice, or swap in cooked chickpeas. Topped with crunchy, vibrant pomegrantes, feta cheese and cool yogurt, this is a great way to get some nutritious butternut squash into your diet.
Servings 4 -6 servings

Ingredients
  

  • 1 lb ground turkey any ground meat works for this recipe, or for a meat-free version swap in plant-based ground meat alternatives, or 2 cups of cooked chickpeas.
  • 3 cups cubed butternut squash 1" cubes
  • 1 jar Mesa de Vida North African flavor Recipe Starter Sauce
  • 1/4 cup chopped dried apricots or dates
  • 1 Tb pure maple syrup or honey
  • 1/2 cup water or broth
  • Salt to taste/health needs Mesa de Vida products are extremely low in sodium so you can salt to your own needs and tastes.

For serving:

  • hot cooked rice, or cauliflower rice, or pasta, or couscous, or beans
  • yogurt, crumbled feta cheese, and fresh pomegranate arils for topping

Instructions
 

  • Brown the ground meat in a skillet (add healthy oil/fat of your choice if necessary).
  • Stir in the butternut squash, Mesa de Vida North African flavor recipe starter sauce, water, dried fruit, maple syrup, and salt. Bring to a simmer, lower the heat and cover. Cook for 20-30 minutes, until the butternut squash is tender.
  • Serve with the side of your choice, top with a dollop of yogurt, pomegranate arils and feta cheese. Enjoy!
